Cookie Cupcakes

 
 
Yesterday our middle daughter turned seven!  We always send in a fun treat with the girls to share with their class for their birthday.  This year, she kept asking for a cookie cake.  We can't send in full cakes, just because it is too much for the teachers to have to cut and dish it all out.  So I usually send in cupcakes.  This year I tried to honor my daughter's wishes and make Cookie Cupcakes!  They were such a hit that my hubby has already requested them for his birthday too.
 
 
These are so easy, that I hate to even call this a recipe.  I will be making cupcakes for her skating party, she got the cookie cake she wanted for our family celebration at home, so I needed something quick and easy for the classroom treat.  These were so easy.  The fact they are so yummy is just a bonus.  
 

Cookie Cupcakes

Makes 12 servings

Ready to bake refrigerated cookie squares
Frosting

Preheat oven to 325 degrees.  Grease a regular size muffin pan with cooking spray.  Combine two of the cookie squares and place in muffin cup.  Bake for 20-24 minutes.  Allow to cool in muffin pan.  Your cupcakes will sink in the middle, making a nice little cup for you to fill.  When cool, run a butter knife around the edge of your cookie cupcake to remove it. 

Using a pasty bag (or simply a sandwich baggie with the corner trimmed off), top your cookie cupcake with frosting.

This is such a great recipe to personalize.  I used chocolate chip cookies and strawberry frosting.  Use your favorite cookie flavor and frosting.  Or instead of frosting, top with ice cream and hot fudge.  You could also add mix-ins to the cookie dough or even on top of the frosting.  Have fun making it your own.  What's your favorite combination?
