The cooler weather is here and that means soup is a perfect dinner option! A warm and comforting meal at the end of the day is a great way to make you feel all warm and cozy at home. Plus it can be super easy to throw together. This chicken tortellini soup is excellent for those busy nights. It has all the veggies and protein you need in one pot. I didn't even have to tell the kids to finish their veggies, they both had two bowls! I love the added tortellini instead of plain pasta. It gives it that extra richness and flavor. The hubby loves to add crackers to his too. We had some leftover and the girls were more than happy to take it for lunch the next day. So quick and easy! Hope you enjoy!
Chicken Tortellini Soup
32 oz carton of chicken broth
2 1/2 cups water
Breast meat from a rotisserie chicken, chopped or shredded
1 cup frozen mixed veggies
2-3 cups of frozen tortellini, according to taste
2 celery ribs, chopped
2 carrots, chopped
1/2 teaspoon garlic salt
1/2 teaspoon dried oregano
1/4 teaspoon pepper
Bring broth and water to a boil. Add chicken and vegetable. Cook 5 minutes. Add remaining ingredients. Cook 10-15 minutes longer or until veggies are tender.
