I love anything pumpkin this time of year, especially if it is easy to make. What could be easier than 3 ingredients? Add in some frosting and I'm hooked! I have a recipe that I've shared for easy Pumpkin Spice Cake, but then I saw over on Purplest Pecalin how she made a similar recipe into cookies. These cookies are very moist and almost cake like, so I figured I could use them to make Whoopie Pies.
You will need Spice cake mix, a can of pure pumpkin, and cream cheese frosting. Feel free to make homemade frosting, but it won't be 3 ingredients anymore. :-)
Simply combine the pumpkin and cake mix in a mixing bowl. Just keep mixing, it will be thick but it will combine. Spoon your mixture onto a greased baking sheet. Bake at 350 for 12-14 minutes. The cookies do not spread. They will pretty much look the same coming out as they did going in. So, if you want a smooth look, try and smooth them out before baking. You will know that they are done if they are a little firm to the touch.
Allow to cool completely. I used a heavy duty sandwich bag with a corner cut off to pipe frosting on to the bottom of one of the cookies. Top it with another cookie. Very moist and delicious!
