Everyone deserves a little treat every now and then, might as well make it a yummy one! My husband loves anything peanut butter and chocolate. I've made cake balls in the past and we also love buckeyes, so I decided to try and combine the two. I would call it a success!
I do like to bake, but with three little girls not too much of it is from scratch. I used chocolate cake mix and chocolate canned frosting, but feel free to substitute your own homemade recipes.
You will start by baking your cake and letting it cool. Then you will break the cake into a bowl, add the frosting and mix. Next we will make our peanut butter balls and let them chill. Then we will be rolling our stuffed cake balls!
Peanut Butter Stuffed Cake Balls

1 box devils food cake mix (plus all the required ingredients to make the cake listed on the box)
1 can chocolate frosting
1 cup smooth peanut butter
1/8 cup unsalted butter
1/4 teaspoon vanilla
1 - 1 1/4 cup powdered sugar
2 packages Wilton candy melts (dark cocoa)
Begin by baking your cake as directed on the box. Set aside and let cool completely.
In a microwaveable bowl, combine peanut butter and butter. Microwave for about 1 minute, stirring every 20 seconds, until soft. Stir in vanilla and powdered sugar until it forms a dough texture. You may need to add more powdered sugar. Next roll the dough into 3/4 inch balls. Place your rolled balls on a cookie sheet covered with wax paper. If you are having trouble rolling the dough, chill it for a few minutes and it should be less sticky. Refrigerate peanut butter balls about an hour.
Break up your cake into a large bowl. Add the can of frosting and stir until combined. Refrigerate an hour. Keeping everything cold makes it easier to work with. Next you will wrap the cake mixture around the peanut balls and roll it. After covering all the balls with the cake, refrigerate them again to make them easier to dip in the chocolate.
Heat up your candy melts as directed on the package. Use toothpicks or a spoon to dip your stuffed cake balls in the chocolate. Place the dipped balls on a cookie sheet covered with wax paper. Return to fridge to harden. Store cake balls in an airtight container. Enjoy!
