So this week I've shared with you the Pinterest inspired recipes that we made for our Father's Day meals. Tuesday I shared our Creme Brulee French Toast breakfast. Wednesday I shared our appetizers, Parmesan Bloomin' Cheese Bread and Black Bean & Corn Guacamole. Both are great for parties!
Today I'm going to share this recipe for Chocolate Eclair Cake. I first had this pudding based cake when a friend brought it to a pool party we all attended. I loved it and she made it sound so easy to make. I really planned on making it, but never got around to it. Then I rediscovered it again on Pinterest. The version I found was posted from allrecipes. The hubby picked it out of all the choices I gave him as his favorite for me to make. I made it the night before, giving the pudding layers a chance to soften the graham crackers and meld together. Delicious!
Chocolate Eclair Cake
2 individual packages graham crackers
2 (3 ounce) packages instant vanilla pudding mix
3 cups milk
1 (8 ounce) container frozen whipped topping, thawed
1 (16 ounce) package prepared chocolate frosting
Line the bottom of a 9x13-inch pan with graham crackers. In a large bowl, combine pudding mix and milk. Stir well. Stir in whipped topping to pudding mixture. Spread half of mixture over graham cracker layer. Top with another layer of graham crackers and the remaining pudding. Top all with a final layer of graham crackers and frost with chocolate frosting. Refrigerate until serving.
