Valentine's Day Toffee

Valentine's Day is almost here! 
What could be better than a sweet treat to express your love!

This yummy toffee is so pretty and even more addictive!

I really have to keep myself from making it too often because I will eat the whole batch!


To make it Valentine's Day themed, I made some colored sugar to sprinkle on top.
Very easy and much cheaper than buying the store bought kind.


Simply spoon some white sugar into a plastic sandwich bag.  To make pink, squeeze one drop of red food coloring into the bag.  Close the bag.  Massage the dye into the sugar until combined.  To make red, squeeze 3-4 drops of red food coloring into the bag and combine.  Allow to dry.


White Chocolate Valentine's Day Toffee

1 cup unsalted butter
1 cup brown sugar
Sleeve of saltines
16 oz white almond bark
colored sprinkles or decorations

Preheat oven to 350.  Line a jelly roll pan with foil and spray with cooking spray.  Cover your pan with a single layer of saltines.  On the stove top, melt your butter and sugar until it boils.  Lower the heat and simmer 5-6 minutes, until the sugar is dissolved.  Pour the mixture over your crackers.  Place your pan in the oven and bake for 8-10 minutes.  It should look bubbly.  While your toffee is in the oven, melt your almond bark according to the instructions on the package.  I melted mine in the microwave, heating for short increments and stirring each time.  Take your pan out of the oven and let it sit for just a few minutes to set up just a little.  Pour your melted almond bark on and then spread it around to cover your toffee.  Sprinkle with your colored sugar and decorations.  Cool completely and break into pieces.
