Yes, I mean the Super Bowl!
I'm thinking that they should make it a long holiday weekend, with Monday off. I'm sure there are quite a few people that probably call in sick anyways. Those that do show up, probably aren't all that productive anyways.
We used to go out for Super Bowl parties, but now with the kids in school, it's just easier to watch the game from home. To my husband, the Super Bowl is an excuse to eat junk food! We usually do a bunch of appetizer foods. This year the hubby is going to smoke some BBQ.
It's something he likes to do, but it is pretty time consuming so he doesn't get to that often. Since we are going to be home this weekend, it was the perfect opportunity. It usually takes at least 12 hours, depending on what he makes. I'm really looking forward to those pulled pork sandwiches!
To go along with our sandwiches, I wanted to make a dip that we could snack on during the game.
What's better than guacamole and corn chips? Plus it is healthier than regular chips and dip.
The other weekend at my Mom's house, we made this chunky gaucamole. I don't think I can go back to plain guac. It's so simple and it can really extend the amount of dip you have if you are making it for a party.
I used store bought guacamole, but you could definitely use homemade if you want.
For the corn, I used a mixture of white and yellow corn.
This dip is so simple, yet so yummy!
Guacamole, Corn, & Bean Dip

Guacamole (Homemade or store bought)
Frozen White corn (thawed)
Can of Black Beans (drained & rinsed)
Tomato (diced)
Combine all ingredients in a bowl.
Choose the amount of each to your liking.
The chunkier the better, in my opinion.
