Mexican Pizza



I was planning on making some quick pizzas for dinner the other night.  I already had some packaged pizza crusts, so I just needed some toppings.  I wanted to add some extra veggies in there to make it healthier, so I asked my daughter what kind of veggies she wanted on her pizza.  She wasn't really interested in the spinach, mushrooms, and peppers I was putting on my pizza.  She wanted corn.  I told her that wasn't really a traditional pizza topping, but maybe you could put it on a Mexican Pizza.  So it was decided.  We were going to make Mexican Pizza for dinner.


Mexican Pizza

Pizza Crust (Packaged or pre Baked)
1 can refried beans
1 can black beans
1 can corn (or thawed bag of frozen)
1 tomato, diced
2 cups cheddar or mexican cheese
Sour cream (optional)
Lettuce (optional)

Spread refried beans on your pizza crust.  Spread black beans, corn and tomatos on top.  Sprinkle with cheese.  Bake at 350 for 10 minutes.  Serve with a dallop of sour cream and lettuce.



The girls loved their pizza and they got to have corn on it!  I loved that they ate some veggies and beans.  Even the baby ate most of her pizza.  Of course, she left all of the crust part and ate the toppings off.  But at least she ate the healthy stuff!  She's been so picky that we're happy when she eats anything at all right now.  Beans are one of her favorites though.  This is a great quick meal or even a fun party snack.  Enjoy and have fun adding all of your own favorite burrito toppings to this Mexican Pizza!
